Plated main examples:

Fillet of English pork wrapped in prosciutto, ham hock bonbon, caramelised apple and apple cider sauce with dauphinoise potatoes and seasonal vegetables

Fillet of beef cooked medium rare, cauliflower cheese puree, winter berry and port reduction with fondant potato and seasonal vegetables.
